Faithful: A Novel, by Alice Hoffman

From the New York Times bestselling author of The Marriage of Opposites and The Dovekeepers comes a soul-searching story about a young woman struggling to redefine herself and the power of love, family, and fate.

Growing up on Long Island, Shelby Richmond is an ordinary girl until one night an extraordinary tragedy changes her fate. Her best friend’s future is destroyed in an accident, while Shelby walks away with the burden of guilt.

What happens when a life is turned inside out? When love is something so distant it may as well be a star in the sky? Faithful is the story of a survivor, filled with emotion—from dark suffering to true happiness—a moving portrait of a young woman finding her way in the modern world. A fan of Chinese food, dogs, bookstores, and men she should stay away from, Shelby has to fight her way back to her own future. In New York City she finds a circle of lost and found souls—including an angel who’s been watching over her ever since that fateful icy night.

Here is a character you will fall in love with, so believable and real and endearing, that she captures both the ache of loneliness and the joy of finding yourself at last. For anyone who’s ever been a hurt teenager, for every mother of a daughter who has lost her way, Faithful is a roadmap.

Alice Hoffman’s “trademark alchemy” (USA TODAY) and her ability to write about the “delicate balance between the everyday world and the extraordinary” (WBUR) make this an unforgettable story. With beautifully crafted prose, Alice Hoffman spins hope from heartbreak in this profoundly moving novel.

Say Something. Feel Something. Do Something. The Top Ten Things That Are Great About FAITHFUL.
By E. Burian-Mohr
How did this book find me? I was there, hiding out in the section with thrillers, suspense, serial killers, crazed stalkers... and then I chose this lovely book. And for a while it made cynical me a bit less cynical.

Shelby and Helene are high school best friends. They wear matching bracelets. They do everything together. So when beautiful Helene is dumped by her boyfriend and wants to throw rocks through his window, Shelby reluctantly goes along and drives through the winter night. She hits a patch of ice and skids. Instead of turning into the skid (remember that from driver's ed?) she hits the brake. The car spins and collides. Shelby thinks she has died, but she suffers minor physical injuries. Helene is in a coma.

Helene is eventually moved to her home, and is thought to be the bestower of miracles, a sleeping beauty in Long Island. People line up to spend a moment in her presence, to hold her hand and perhaps be cured.

Shelby, meanwhile, is institutionalized. She stops speaking. She cuts herself. She shaves her head. She feels guilty for every bad thing that happens to others. She is convinced she causes bad things. She feels guilty and responsible for what happened to Helene.

Then one day she receives a mysterious postcard. It has a drawing and a simple message. "Say something."

Thus begins Shelby's slow climb back to life.

What makes it a great book. Well, since you asked...

10. Even in my deep cynicism, I believe that miracles happen. Alice Hoffman apparently believes this, too.

9. If I had to start on motherhood all over again, I would want to be exactly like Shelby's mother, who stands by her daughter through the deepest tragedies. She doesn't judge. She supports and finds beauty where others might see none. She is strong when she needs to be strong and gentle when she needs to be gentle.

8. One of the best portrayals of teenage angst, shown through Shelby's friend's daughter and understood by Shelby, who has clearly completed the AP Teenage Angst course.

7. Where does your soul go? Shelby wants to find out.

6. The writing is tender and sensitive without being mushy and trite.

5. The mystery of the postcards. Who is sending them? Why? How does the sender know what the next message needs to be?

4. Hoffman has the ability to make us feel the depths of despair and the glimmers of hope.

3. Can a stray dog (or cat) save your soul?

2. What is behind you is gone. What is in front of you awaits.

1. Through love and understanding and the goodness of humanity, we can be healed.

Okay. Enough tenderness and hope. I'm heading back to my usual literary diet of serial killers.

Magical Journey
By KDMask
If you are an Alice Hoffman fan, I'm sure you'll buy this book no matter what the reviews because you know her work. Her latest tale of redemption does not disappoint. Through a story of tragedy and sorrow, she weaves a journey that's so personal you'll come to love the main character. Shelby and Helene were best friends until one night that changed it all. What happens to the survivor is a life clouded in guilt. Shelby lives in her basement shrouded in memories and bitterness. When she finally emerges, the journey is long and mostly painful. Shelby learns about forgiveness of self and acceptance of others. Hoffman develops each character carefully and in detail. She also infuses that touch of magic for which she is famous. Dreamy and flowing, this book is a must read.

A long slow uphill climb
By Sue B
This is not an easy feel good light hearted read. It's a testament to how one seemingly innocent decision can lead to a life filled with regret, guilt and self punishment. I have to confess that midway through I wanted to put it down and walk away because as much as I was rooting for Shelby to let herself feel some level of happiness I was getting tired of the doom and gloom on page after page. I actually did put the book away for a couple of weeks to give myself a break from it and then when I picked it back up I found I couldn't put it down because I just couldn't let go of wanting her to get some sort of a happy ending or at least a glimpse of what a happy life could feel like. I won't spoil the ending for you but I will say reading this book is a long slow uphill climb but in the end it's worth it.

The Mandarin

Hong Kong, January 25, 2013

In early 2012, a brother and sister clearing out their late mother’s attic in the London neighborhood of Hampstead discovered what appeared to be a cluster of old Chinese scrolls at the bottom of a steamer trunk. By chance, the sister had a friend who worked at Christie’s, so she dropped them off--in four Sainsbury’s grocery sacks--at the auctioneer’s salesroom on Old Brompton Road, hoping they might “take a look and tell us if they’re worth anything.”

When the senior specialist of Chinese Classical Paintings opened up one of the silk scrolls, he nearly went into cardiac arrest. Unfurled before him was an image so remarkably rendered, it immediately reminded him of a set of hanging scroll paintings long thought to be destroyed. Could this be The Palace of Eighteen Perfections? The artwork, created by the Qing dynasty artist Yuan Jiang in 1693, was believed to have been secretly removed from China during the Second Opium War in 1860, when many of the royal palaces were ransacked, and lost forever.

As staffers scurried around unrolling the scrolls, they discovered twenty-four pieces, each almost seven feet tall and in immaculate condition. Placed side by side, they spanned thirty-seven feet, almost filling the floor space of two workrooms. At last, the senior specialist could confirm that this was undoubtedly the mythical work described in all the classical Chinese texts he had spent much of his career studying.

The Palace of Eighteen Perfections was an opulent eighth-century imperial retreat in the mountains north of modern-day Xi’an. It was said to be one of the most magnificent royal residences ever built, with grounds so vast that one had to travel between the halls on horseback. On these ancient silk scrolls, the intricate pavilions, courtyards, and gardens that meandered through a dreamlike blue-and-green mountain landscape were painted in colors so vibrantly preserved, they seemed almost electric in their iridescence.

The auction-house staff stood over the exquisite masterpiece in awed silence. A find of this caliber was like discovering a long-hidden painting by da Vinci or Vermeer. When the international director of Asian Art rushed in to see them, he began to feel faint and forced himself to take a few steps back for fear that he might fall onto the delicate artwork. Choking back his tears, the director finally said, “Call François in Hong Kong. Tell him to get Oliver T’sien on the next flight to London.”1

The director then declared, “We need to give these beauties the grand tour. We’re going to start out with an exhibition in Geneva, then London, then at our Rockefeller Center showroom in New York. Let’s give the world’s top collectors a chance to see it. Only then will we take it to Hong Kong, and sell it right before the Chinese New Year. By then the Chinese should be frothing at the mouth in anticipation.”

Which is precisely how Corinna Ko-Tung came to be sitting in the Clipper Lounge of the Mandarin Hotel in Hong Kong a year later, impatiently awaiting the arrival of Lester and Valerie Liu. Her richly embossed business card listed her as an “art consultant,” but for a few select clients, she was a great deal more than that. Corinna was born to one of Hong Kong’s most pedigreed families, and she secretly parlayed her extensive connections into a very profitable sideline. For clients like the Lius, Corinna did everything from refining the art on their walls to the clothes on their back--all in service of getting them memberships at the most elite clubs, their names onto the right invitation lists, and their children into the city’s top schools. In short, she was a special consultant for social climbers.

Corinna spotted the Lius as they ascended the short flight of stairs up to the mezzanine lounge overlooking the lobby. The couple cut quite a striking picture, and she had to pat herself on the back for this. The first time Corinna met the Lius, they were both in head-to-toe Prada. To these new arrivals from Guangdong, it was the height of sophistication, but to Corinna, it just screamed clueless Mainland money. Thanks to her handiwork, Lester entered the Clipper Lounge looking particularly dapper in a bespoke three-piece suit from Kilgour of Savile Row, and Valerie was chicly clad in a silvery Persian lamb parka from J. Mendel, appropriately sized black pearls, and dove-gray suede Lanvin ankle boots. But there was something a little off about her outfit--the handbag was a mistake. The glossy ombre-dyed reptile-skin bag obviously came from some nearly extinct species, but it reminded Corinna of the sort of handbag only a mistress would carry. She made a mental note to drop a hint at the appropriate moment.

Valerie arrived at the table apologizing profusely. “I’m sorry we’re late. Our chauffeur mistakenly took us to the Landmark Mandarin Oriental instead of this one.”

“Not a problem,” Corinna replied graciously. Tardiness was one of her pet peeves, but with the kind of retainer the Lius were paying her, she wasn’t about to complain.

“I’m surprised you wanted to meet here. Don’t you think the tearoom at the Four Seasons is much nicer?” Valerie asked.

“Or even the Peninsula,” Lester chimed in, casting a dismissive eye at the rectangular 1970s-era chandeliers cascading from the ceiling of the lobby.

“The Peninsula gets too many tourists, and the Four Seasons is where all the new people go. The Mandarin is where proper Hong Kong families have been coming to tea for generations. My grandmother Lady Ko-Tung used to bring me here at least once a month when I was a girl,” Corinna patiently explained, adding, “You must also leave out the ‘Oriental’--we locals simply call it ‘the Mandarin.’ ”

“Oh,” Valerie replied, feeling a little chastised. She glanced around, taking in the subdued oak-paneled walls and armchairs with just the perfect amount of sag in the seat cushions, her eyes suddenly widening. Leaning closer in, she whispered excitedly to Corinna, “Do you see who’s over there? Isn’t that Fiona Tung-Cheng with her mother-in-law, Alexandra Cheng, having tea with the Ladoories?”

“Who are they?” Lester asked, a little too loudly.

Valerie nervously shushed her husband in Mandarin. “Don’t stare--I’ll tell you later!”

Corinna smiled in approval. That Valerie was a quick study. The Lius were relatively new clients, but they were Corinna’s favorite type of clients--Red Royals, she called them. Unlike fresh-off-the-boat Mainlander millionaires, these heirs of China’s ruling class--known in China as fuerdai, or “second-generation-rich”--had good manners and good teeth, and had never known the deprivation of their parents’ generation. The tragedies of the Great Leap Forward and the Cultural Revolution were ancient history as far as they were concerned. Obscene gobs of money had come easily to them, so obscene gobs they were ready to part with.

Lester’s family controlled one of China’s largest insurance companies, and he met Valerie, the Shanghai-born daughter of an anesthesiologist, when they were both at the University of Sydney. With an ever-growing fortune and ever-refining taste, this thirtysomething couple was ambitiously striving to make their mark on the power scene in Asia. With homes in London, Shanghai, Sydney, and New York, and a newly constructed house that resembled a cruise liner in Hong Kong’s Deep Water Bay, they were anxiously filling the walls with museum-quality art in the hopes that Hong Kong Tattle might soon do a feature.

Lester got right down to business. “So how much do you think these scrolls will end up going for?”

“Well, that’s what I wanted to discuss with you. I know you said you were prepared to go up to fifty million, but I have a feeling we will break all records tonight. Would you be prepared to go up to seventy-five?” Corinna said carefully, testing the waters.

Lester didn’t flinch. He reached for one of the sausage puffs on the silver cake stand and said, “Are you sure it’s worth that much?”

“Mr. Liu, this is the single most important work of Chinese art to ever come on the market. It’s a once-in-a-lifetime opportunity--”

“It’s going to look so good in the rotunda!” Valerie couldn’t help blurting out. “We’re going to hang it so that the whole painting is panoramic, and I’m having the walls on the first and second floors repainted to exactly match the colors. I love those turquoise tones . . .”

Corinna ignored Valerie’s chatter and continued. “Aside from the artwork itself, the value of owning it will be incalculable. Think how much it will raise your profile--your family’s profile--once it’s known that you acquired it. You will have beat out the top collectors in the world. I’m told that representatives for the Bins, the Wangs, and the Kuoks are bidding. And the Huangs just flew in from Taipei--interesting timing, isn’t it? I also have it on good authority that Colin and Araminta Khoo sent a special team of curators from the National Palace Museum in Taipei to examine the piece last week.”

“Ooh--Araminta Khoo. She’s so beautiful and chic! I couldn’t stop reading about that incredible wedding of hers. Do you know her?” Valerie asked.

“I was at the wedding,” Corinna said simply.

Valerie shook her head in wonder. She tried to imagine the middle-aged, mousy-looking Corinna, who always wore the same three Giorgio Armani pantsuits, at the most glamorous event ever to hit Asia. Some people had all the luck, being born into the right family.

Corinna continued her lecture. “So let me give you the drill. The auction tonight begins at eight sharp, and I have secured us entry to the Christie’s VVIP skybox. That is where you will be throughout the auction. I will be downstairs on the auction room floor, bidding exclusively for you.”

“We won’t be with you?” Valerie was confused.

“No, no. You’ll be in this special lounge where you can look down onto all the action.”

“But won’t it be more exciting to be down on the floor itself?” Valerie pressed on.

Corinna shook her head. “Trust me, you don’t want to be seen on the auction floor. The VVIP skybox is where you want to be. That’s where all the top collectors will be, and I know you will enjoy that--”

“Wait a minute,” Lester interrupted. “What’s the point of buying the damn thing then? How will anyone know we made the winning bid?”

“First of all, you will be seen by everyone at the VVIP skybox, so people will already suspect, and first thing tomorrow, I will have one of my sources at the South China Morning Post issue an unconfirmed report that Mr. and Mrs. Lester Liu of the Harmony Insurance family acquired the painting. Trust me, that’s the classy way to do it. You want people to speculate. You want to be that unconfirmed report.”

“Ooh, you’re so brilliant, Corinna!” Valerie squealed in excitement.

“But if it’s ‘unconfirmed,’ how will people know?” Lester was still confused.

“Hiyah, slow tortoise, everyone will see the painting when we throw our housewarming party next month,” Valerie chastised her husband, smacking him on the knee. “They will confirm it with their own envious eyes!”

The Hong Kong Convention and Exhibition Centre, situated right on the harbor in Wan Chai, boasted overlapping curved roofs that resembled a gigantic manta ray gliding through the water. That same evening, a parade of starlets, boldface-name socialites, low-level billionaires, and the sort of people Corinna Ko-Tung deemed to be inconsequential paraded through the Grand Hall, vying for the most visible seats at the auction of the century, while the back of the room was packed to the rafters with the international press and onlookers. Upstairs in the plush VVIP skybox, Valerie and Lester were in seventh heaven as they rubbed elbows with the serious-money crowd over Laurent-Perrier champagne and canapes prepared by Cafe Gray.

When at last the auctioneer stepped up to the polished wood podium, the lights in the hall began to dim. A massive gold latticework screen ran along the wall facing the stage, and at the appointed moment, the screen began to part, revealing the hanging scrolls in all their glory. Brilliantly enhanced by the state-of-the-art lighting system, they almost appeared to glow from within. The crowd gasped, and when the lights came up again, the auctioneer promptly began the session without any fuss: “An exceedingly rare set of twenty-four hanging scrolls from the Qing dynasty, ink and color on silk, depicting the Palace of Eighteen Perfections, by Yuan Jiang. Inscribed by the artist, and dated 1693. Shall we have an opening bid of--one million?”

Valerie could feel the adrenaline coursing through her veins as she saw Corinna raise her blue-numbered paddle to volley the first bid. A flurry of paddles began popping up around the room, and the price began its stratospheric climb. Five million. Ten million. Twelve million. Fifteen million. Twenty million. Within a matter of minutes, the bid was at forty million. Lester leaned forward in his chair, analyzing the action on the auction-room floor like some complex chess match, and Valerie clawed her nails into his shoulder repeatedly in high anticipation.

When the bidding hit sixty million, Lester’s phone rang. It was Corinna sounding frantic. “Suey doh sei,2 it’s going up too fast! We’re going to pass your seventy-five-million limit in no time. Do you want to keep bidding?”

Lester breathed in deeply. Any expenditure over fifty million would surely be noticed by his father’s bean counters, and there would be some explaining to do. “Keep going till I stop you,” he ordered.

Valerie’s head was spinning in excitement. They were so close. Imagine, soon she would own something that even Araminta Khoo coveted! At eighty million, the bidding finally slowed down. No more paddles in the room were raised with the exception of Corinna’s, and it seemed like there were only two or three telephone buyers remaining to bid against the Lius. The price was going up only in increments of half a million, and Lester closed his eyes, praying he would get it for under ninety million. It was worth it. It was worth the scolding he would get from his father. He would make his plea that he had bought the family a billion dollars’ worth of good publicity.

Suddenly there came a commotion from the back of the auction room. Murmurs could be heard as the standing-room-only crowd began to give way. Even in a room packed with celebrities dressed to the nines, a hush came over the space as a strikingly attractive Chinese woman with jet-black hair, powdered white skin, and crimson lips, dramatically dressed in a black velvet off-the-shoulder gown, emerged from the crowd. Flanked by two snow-white Russian wolfhounds on long diamond leashes, the lady began to walk slowly up the central aisle as every head swiveled toward the sensational sight.

Clearing his throat discreetly into the mic, the auctioneer tried to regain the attention of the room. “I have eighty-five point five million, who will say eighty-six?”

A big disappointment
By Richard C. Reynolds
Author Kevin Kwan returns with characters from his earlier novel, Crazy Rich Asians: Nicholas Young and Rachel Chu who are about to get married, Nick’s cousin Astrid Leong, and Hong Kong soap opera star Kitty Pong who is now married to billionaire Bernard Tai.
The plot has us bouncing around to various locations all over the world, a device which shows us how wealthy everyone is with their own jumbo jets, magnificent mansions, closets full of designer clothes, oodles of expensive jewels, and net worth in the billions of dollars. Kwan devotes plenty of ink to these trappings of wealth but unfortunately skimps on his characters and the story line. It gets rather tiresome after reading page after page of prose that resembles an inventory of valuables for an insurance policy.
A big disappointment after enjoying Kwan’s earlier book.

save yourself the time, money, and disappointment

Vapid, and not even in an entertaining sort of way. The filler in this book - the various examples of ostentatious spending that serve no other purpose than to shock and awe - is copious. I felt that there was little character development. I didn't read the first book for a life-changing experience, nor did I read this second book for that reason, either. However, the first book was, at least, entertaining, with a fun plot that left me wondering at the end of each chapter.

I regret reading every page of this book, and in retrospect, would have skipped entire sections of pointless exposition and explanation.

A Great Second Act to Crazy Rich Asians
By M. Picardi
A great second act to Crazy Rich Asians. Kwan does a delightful job continuing to give us an inside look into the lives of China's upper- upper echelon. The characters are at times formidable, detestable, lovable, repulsive, and downright hilarious. Throughout I found myself continuing to cheer for Rachel and Nick as they embark on the next leg of their journey through the upper levels of Chinese society. Great for voyeuristic readers like yours truly.

but this copy is a major disappointment.
By VC
This review is not of the book, but this corrupted reprint. This printing, and the corresponding lady's version are NOT the same as the original, as content has been omitted. My boyfriend and I got these books to learn some more traditional teachings on Christian conduct, and the Christian parts were largely omitted including an entire chapter (Chapter X "Conduct in Church"). The 5 star rating is for the original, but this copy is a major disappointment.

I love practical books
By Fabio
I love practical books. And that is exactly a practical one. I'll try to make each of the projects. Only point, it uses Proteus. I've tried this software long ago when it was free, now it's quite expensive. So I will make each project for real, it's less expensive and you have more money to buy parts for your arduino/genuino projects. Even if this book is quite new it's not using the very last version of arduino ide.

Review

"Bittman’s latest tome cements his position as encyclopedist of modern cooking. Here he focuses on the process of baking, presenting more than 2,000 recipes. It surprises no one that he inventories cakes, cookies, pies, breads, and all manner of pastries, but Bittman delves deep into less expected crackers and their cousins, flatbreads. He also gives instructions for fillings and frostings to top those baked items. Other nonbaked recipes embrace frozen desserts, sauces, and even some candies. Bittman’s gift is the ability to share myriad intelligent approaches to basic recipes, making one formula yield multiple results and encouraging readers to use their own imaginations. Tables and sidebars throughout offer equipment and technique tips. He even shows how to reformat standard recipes into vegan-friendly alternatives. In his quest to leave no baking question unanswered, Bittman advises how to repurpose burned cookies to ensure that even disaster can be salvaged. This compendium is the next best thing to having the master himself in the kitchen, and should be a staple for all public library collections."—Booklist (starred review)

"Prolific author and food writer Bittman (How to Cook Everything) brings the joy of baking to life in this comprehensive collection of 2,000 recipes demystifying the baking process. He explains its fundamentals, simple techniques, and foundation recipes that serve as springboards for “a number of easy twists” on from-the-oven homemade treats. Bittman is big on improvisational embellishments, adaptability, and recipe flexibility for every diet, and he creates useful “mix-and-match” charts for substitute ingredients, innovative variations, and add-ins. Sidebars contain advice on topics such as the advantages of milling nut flours at home and the importance of cooking with kids. There’s the lowdown on gluten, 18 flour types, sweeteners, fats and oils, dairy options, and types of chocolate. Flowcharts, lexicons defining baking terminology, and recommendations for tools and core items to stock in a baker’s pantry are also included. The marvels of eggs and every genre of pastry dough, especially puff pastry, are celebrated. This tour through the world of baking doesn’t skimp; it has 15 pages on pancakes alone, charts showing ways to dress up cookies, and 10 varieties of fritters. A section on savory baking features cabbage strudel and corn-filled chicken chile cobbler. There’s nothing half-baked about this impressive omnibus as Bittman delivers the promised “everything” in an epic homage to baking."—Publishers Weekly

"Since How To Cook Everything (1998) and How To Cook Everything Vegetarian (2007) are two of my cookbook staples, I was excited to receive How To Bake Everything: Simple Recipes for the Best Baking (Houghton Harcourt. Oct.), the latest release from food journalist and former New York Times columnist Mark Bittman. From bakeware basics to getting started with brownies, pies, or breads, this work will provide bakers at all levels with something new. My husband has already tried a pound cake recipe, plus some frostings to go along with it. Naturally, I plan to experiment with more recipes while watching PBS’s The Great British Baking Show."—Library Journal

“Wow! Once again, Bittman shows that he’s unafraid of the big. He manages to take on ‘everything’ to do with baking without losing track of how simple, fun, and delicious it should be.”—Yotam Ottolenghi, author of Jerusalem, Plenty, and Nopi

“He’s taught us how to cook everything before, and now it’s time to bake. Leaving no question unanswered, here Mark Bittman has mastered all things baking, ensuring that everyone from novices to guys like me can whip, fold, and maybe even knead bakery-worthy breads and pastries from their home ovens.”—Jim Lahey, founder/owner of Sullivan Street Bakery and author of My Bread

“How to Bake Everything is more than a recipe book, it is a constant companion to help navigate the complex vocabulary and techniques of the mysterious and joyous world of baking. Bittman dispels all of my previously perplexing baking phobias so that I can now truly create delicious and satisfying pies, loaves, and slumps with confidence for the first time in my long chef’s life. You NEED this book! It will replace all baking cookbooks in my library and its pages are destined for the same stained and dogeared finish as How to Cook Everything!”—Mario Batali, chef, entrepreneur, and philanthropist

“The genius of Mark Bittman’s approach is his eminent practicality and consistent ability to elucidate and unravel the hows and whys of good cooking. How to Bake Everything is a grand addition to any cook’s repertoire—in simplicity one finds greatness.”—Christopher Kimball, founder of Milk Street Kitchen

"Like all of Bittman’s books, this is incredibly comprehensive — with over 2,000 recipes — and it makes for a perfect starter book for new bakers."—Grub Street

"The prolific Mark Bittman is back with How to Bake Everything. This time, he's taking on the cooking domain often viewed as too rigid and precise for the casual cook and Bittman-ized it, showing us what is negotiable and what isn't, focusing on simple core recipes with lots of variations, along with charts, lists, and illustrations. His aim is to turn us all into confident, creative bakers who can improvise, adapted, and customize, whether baking a tart, a cake, cookies, flat-bread, a crusty baguette or a flaky croissant." — Sybil Pratt, BookPage

Pretty please with sugar on top, bake recipes from the book before you review...
By MadMeg
Of the 13 reviews so far, only one person has actually baked from the book and with questionable results. Another review did have some results but it is no longer is on line. I bought How To Cook Everything when it first came out in 1998 and used it so often when cooking that the binding is no longer attached. I've given or suggested HTCE for new cooks for years. I own other Bittman books that I don't use quite so much but reference them on occasion. This book was one I really wanted and I pre-ordered it. I'm really focused on improving my baking this winter.

I'm not sold on this book yet and wish reviews would be updated by people after they've actually baked from it. Yes it is full of information and there's lots of good sounding recipes, but information and good sounding don't necessarily equate with good results. Baking is much more science than art so the information needs to be spot on. Unlike cooking where questionable results in many cases can be tweaked to be edible or even better than the recipe, this is not always the case with baking. So here's my take so far.

I made the banana bread and like the prior reviewer whose post is no longer viewable, it was dense. Since we both had the same result, I'll keep the current recipe which is loved by all. I made the Overnight Waffles for use in a Belgian waffle maker. The description reads light and chewy. They were definitely chewy. To contrast, I made the King Arthur waffles the next morning and this was undoubtedly the winner.

The first shot at the no knead bread was a gloppy mess, which led to me overworking the dough and eventually throwing it out. Cut to the NYTimes video of Mark and Jim Leahy and voila, my bread came out perfectly using the NYT recipe, which is different than the book. Made the HTBE version again and it was same result as the first time which is runnier and goopier than the NYT version. I baked it and it was fine. Didn't look as nice as the NYT version and not as easy to work with, but texture and flavor were nice. Waited a couple of days and I made it again.
Im going to stick to the NYT version. The ratio of measured ingredients is not the same between the two recipes, which speaks to using weight as the reference in a recipe. Also, short of reading about working with sticky dough six pages earlier, a person not familiar with bread baking would be confused by the optional 2 tbsp of olive oil. There should at least be a mention next to the word optional about greasing the bowl with it.

The recipe for the sourdough starter was a bomb. I now have the KA one finishing up in the kitchen and I will stick to it.

I'm ready to bake from The Four and Twenty Blackbirds Pie book and will do a comparison between their crust which is not made with a food processor and Mark's which is. I hope more reviewers actually review after trying some of the recipes and not just based on appearances. Certainly I've not made enough to give a full review on all recipes, but felt it important the book not come off as the solution to every homemakers desire to nail baking first time around without anyone commenting on results.

Destined to be dog-eared and stained.
By silent thinker
This is a cook book for people like me, who can't help tweaking recipes. Mark Bittman, like in his other books, has recipes with multitude suggestions for personalizing the baked goodies.

This was the Bittman weekend at my house. Here are the recipes I've tried, with my thoughts on the final items.

Banana Bread. Easy recipe, no problems. I gave the bread 4.5/5. It was a bit too sweet for my taste (maybe the bananas were extra sugary?), but I am biased. I've used an awesome recipe for years that contains sour cream, and Bittman's recipe doesn't. His was a bit firmer than mine, but then again, that's a matter of preference.

Pumpkin pie. That's 2 recipes, the flaky crust (good -- though I might've gotten carried away and over processed it a bit, but it held up fine). The pie could have used more spices, but the texture and mouth-feel were excellent. Definitely beats store bought!

Popovers. I got six giant ones baked in a large size popover pan (recipe for 12 small). Excellent!

And then for the holy grail. Brownies. I've spent my life searching for the perfect one...This might be it. He uses cocoa, not chocolate, but I did add the bonus chocolate chunks, one of the optional tweaks he recommended. Soft, fudgy, chocolatey, gooey.... next attempt will be with Valrohna instead of Hershey's, and I'll know for sure if I the search is over!

I agree with the reviewers who commented on the lack of measurements in weights. I was miffed when a recipe read to use a "stick" of butter, and I had Plugra brand, that's 8 oz, while the usual stick in the US is 4oz, one of four in the package. I played safe and used 4oz of it, and the recipe worked. I suspect the lack of weight measurements may be a carry-over from his cooking books, but baking needs to be more exact, and the oversight is almost inexcusable. So, I'm with the other reviewers on that, and am knocking off a star.

However, I'm discovering that I prefer the format and style of this book more so than my previous go-to all-purpose baking tome, the King Arthur Flour Bakers Companion, which has been relegated to the Goodwill pile. It's easier for me to riff off a "master" recipe than to pore through ten similar recipes (e.g. Muffins with variations vs. pages of different muffins that are all essentially the same basic recipe). This may be preferable to those of us who are somewhat experienced bakers, might be harder for brand new ones. For this, though, I'm giving 3/4 of a star back.

Final verdict: 4.75 stars.

I have a few more recipes planned for this week. If there is a significant change to my rating, I will update the review.

One last disclaimer: I paid for this book, wasn't given any freebies, and I don't know Mr Bittman!

Awesome
By M. E. Carter
I'm a professional baker and because I own a few of Mark Bittman''s cookbooks I thought I'd get this one a try as well. It arrived today and it's another winner by Bittman. It's very detailed and thorough. This is great for bakers of all levels. It breaks down ingredients, equipment and techniques wonderfully. It has a lot of basic recipes with different variations. This book is a great learning tool, however you don't get pictures of food in this book other than illustrations when showing you how to do a action. I'm purchasing two more, one for each of my daughters to have.

The Knowledge-Creating Company: How Japanese Companies Create the Dynamics of Innovation, by Ikujiro Nonaka, Hirotaka Takeuchi

How have Japanese companies become world leaders in the automotive and electronics industries, among others? What is the secret of their success? Two leading Japanese business experts, Ikujiro Nonaka and Hirotaka Takeuchi, are the first to tie the success of Japanese companies to their ability to create new knowledge and use it to produce successful products and technologies. In The Knowledge-Creating Company, Nonaka and Takeuchi provide an inside look at how Japanese companies go about creating this new knowledge organizationally.
The authors point out that there are two types of knowledge: explicit knowledge, contained in manuals and procedures, and tacit knowledge, learned only by experience, and communicated only indirectly, through metaphor and analogy. U.S. managers focus on explicit knowledge. The Japanese, on the other hand, focus on tacit knowledge. And this, the authors argue, is the key to their success--the Japanese have learned how to transform tacit into explicit knowledge.

To explain how this is done--and illuminate Japanese business practices as they do so--the authors range from Greek philosophy to Zen Buddhism, from classical economists to modern management gurus, illustrating the theory of organizational knowledge creation with case studies drawn from such firms as Honda, Canon, Matsushita, NEC, Nissan, 3M, GE, and even the U.S. Marines. For instance, using Matsushita's development of the Home Bakery (the world's first fully automated bread-baking machine for home use), they show how tacit knowledge can be converted to explicit knowledge: when the designers couldn't perfect the dough kneading mechanism, a software programmer apprenticed herself with the master baker at Osaka International Hotel, gained a tacit understanding of kneading, and then conveyed this information to the engineers. In addition, the authors show that, to create knowledge, the best management style is neither top-down nor bottom-up, but rather what they call "middle-up-down," in which the middle managers form a bridge between the ideals of top management and the chaotic realities of the frontline.
As we make the turn into the 21st century, a new society is emerging. Peter Drucker calls it the "knowledge society," one that is drastically different from the "industrial society," and one in which acquiring and applying knowledge will become key competitive factors. Nonaka and Takeuchi go a step further, arguing that creating knowledge will become the key to sustaining a competitive advantage in the future.

Because the competitive environment and customer preferences changes constantly, knowledge perishes quickly. With The Knowledge-Creating Company, managers have at their fingertips years of insight from Japanese firms that reveal how to create knowledge continuously, and how to exploit it to make successful new products, services, and systems.

From Library Journal
This book addresses the generation-old question of why the Japanese are so successful in business. The authors, professors of management at Hitosubashi University, contend that Japanese firms are successful because they are innovative, that is, because they create new knowledge and use it to produce successful products and technologies. They identify two types of organizational knowledge: explicit knowledge, contained in procedures and manuals, and tacit knowledge, learned only by experience. U.S. managers tend to focus on explicit knowledge and stress approaches such as benchmarking, while the Japanese focus on tacit knowledge. Using corporate examples such as Honda, NEC, Nissan, 3M, and GE, the authors provide insights that reveal how to blend the best of both worlds. This scholarly volume is highly recommended not only for academics (especially in organizational theory) but also for readers doing business in and with Japan.?Joseph W. Review

"A fascinating, exciting exposure to a new way of thinking about the knowledge-based company....Provides a model of knowledge creation that will be a touchstone of future work in this field....This important, imaginative book will challenge and intrigue managers and management scholars alike."--D. Eleanor Westney, MIT Sloan School of Management in the Sloan Management Review

"A fascinating volume that will interest philosophers, managers, and more common readers....The analyses are so thorough that they make the one- and two-page descriptions in Forbes magazine seem like elementary fairy stories. The authors have done their research well and provide delightful details."--Minneapolis Star Tribune

"Knowledge creation is to the 90s what excellence was to the 80s. I can't imagine a better book on organizational design for innovation. Nor can I imagine a better common focus for managers and scholars. This is the best and most original blend of organizational theory and practice we are likely to see for some time."--Karl E. Weick, University of Michigan School of Business Administration

"This is the most creative book on management to come out of Japan. The same authors who introduced the rugby approach to new product development, now bring us a myriad of new concepts: tacit knowledge, the oneness of mind and body, middle-up-down management, hypertext organization, to name a few. The insights for this book originated in Japan, but the managerial implications are universal. It is a must read for managers competing in the borderless world."--Kenichi Ohmae, Ohmae & Associates

"Nonaka and Takeuchi take on a subject that is truly on the frontier of management: the process by which companies learn and create competitively valuable knowledge. What is refreshing about this book is that Nonaka and Takeuchi go beyond the slogans that have characterized much of the previous work on this subject, and delve into the specific organization structures and processes involved in organizational creativity and learning. They bring a wealth of specific, in-depth company evidence to bear on the task. The result is an important book which will advance both the literature as well as corporate practice."--Michael E. Porter, C. Roland Christensen Professor of Business Administration, Harvard University

Great tool for the OD professionals' toolkit!
By Mondraea Calvin
Excellent resource for professionals wanting to understand key principles to enabling a culture which promotes the creation and dissemination of knowledge throughout a company. Authors Ikujiro Nonaka and Hirotaka Takeuchi highlight the secrets of successful Japanese companies such as Cannon, Honda and Sharp and their ability to transfer explicit knowledge to tacit knowledge and ultimately new technologies and profits. According to Nonaka and Takeuchi, the key is their approach to managing the knowledge creation process and implementation of the Middle-up-Down management system. This book is a must-read for students and OD professional seeking to influence organizational design and culture.

Well Written Book On The Role Of Tacit Knowledge And Explicit Textual Knowledge In Social Organisations
By Andrew Oliver
In investigating knowledge, to study the role of different kinds of knowledge in the modern corporation - or perhaps, say, government department - one is not interested so much in its ontological status or even its truth or falsity but on its social role how it is learnt and taught and how it changes form as the organisation develops over time ...

Much more solidly based in real companies and real psychology than, say, excessively Hegelian approaches such as the 'social construction of reality' one or even 'ratomorphic behaviourists' who are surprised when they're bitten by theory rejection: the rats bite back, because their conscious minds reject being interpreted in terms of how lab rats behave!

Solid examples from dozens of case study investigations into Japanese companies!

And, whilst not as sound as an ontological approach, quite appropriate for the modern corporation, if not for the astrophysics research institute!

The Founding Text of the Knowledge-Creation School
By Etienne RP
This book has its origins in an article the two authors wrote for the Harvard Business Review in 1986 about new product development in Japanese companies. Rather than construct a complex theory, complete with flow charts and diagrams, they used a simple metaphor: developing a new product is more like a rugby game than a relay race. Under the relay approach, new-product development proceeds sequentially from phase to phase--concept development, feasibility testing, product design, development process, pilot production, and final production--with one group of functional specialists passing the baton to the next group. Under the rugby approach, the product development process emerges from the constant interaction of a multidisciplinary team whose members work together from start to finish. As in rugby, the ball gets passed within the team as it moves as a unit toward the goal.

Because project teams consist of members with varying functional specializations, the issue of learning was considered a key aspect of product development. The article focused on two dimensions of learning: across multiple levels (individual, group, and corporate) and across multiple functions. But although the authors devoted sections to cross-fertilization and transfer of learning, they didn't develop the epistemological dimension of learning, and their focus was more on the learning organization than on the knowledge-creating company. Japanese firms' reliance on trial and error and on learning by doing wasn't analyzed in terms of the prevalence of tacit knowledge and processes of organizational knowledge creation.

In their book, Nonaka and Takeuchi introduce a key distinction between two kinds of knowledge: explicit knowledge and tacit knowledge. Explicit knowledge can be expressed in words and numbers and shared in the form of data, scientific formulae, specifications, manuals, and the like. This kind of knowledge can be readily transmitted across individuals formally and systematically. Tacit knowledge, on the other hand, is highly personal and hard to formalize, making it difficult to communicate or share with others. Subjective insights, intuitions, and hunches fall into this category of knowledge. Difficult to verbalize, such tacit knowledge is deeply rooted in an individual's action and experience, as well as in the ideals, values, or emotions he or she embraces.

There are two dimensions to knowledge creation: epistemological and ontological. The epistemological level describes how knowledge is converted from one type into another through processes of socialization (from tacit knowledge to tacit knowledge), externalization (from tacit knowledge to explicit knowledge), combination (from explicit to explicit) and internalization (from explicit to tacit). The ontological level refers to the knowledge-creating entity: it includes individual, group, organizational, and interorganizational levels. A knowledge spiral emerges when the interaction between tacit and explicit knowledge is elevated dynamically from a lower ontological level to higher levels.

The authors believe that Japanese companies are especially good at realizing this exchange between tacit and explicit knowledge during the product development phase, and that there is a distinctively Japanese approach to knowledge creation. Epistemologically, Westerners tend to emphasize explicit knowledge and the Japanese tend to stress tacit knowledge. Ontologically, Westerners are more focused on individuals, while the Japanese are more group-oriented. These differences give rise to a wholly different view of the organization: not as a machine for processing information, but as a living organism. People in Japan emphasize the importance of learning from direct experience as well as through trial and error. Like a child learning to eat, walk, and talk, they learn with their minds and bodies. This tradition of emphasizing the oneness of body and mind has been a unique feature of Japanese thinking since the establishment of Zen Buddhism.

The Western philosophical tradition, culminating with Wittgenstein, stresses that "we cannot say what we cannot think". But through metaphors, analogies, and pictures, people put together what they know in new ways and begin to express what they know but cannot yet say. As Polanyi put it, "We can know more than we can tell". The concept of tacit knowledge focuses on highly subjective insights, intuitions, and hunches that are gained through practical experience. This messy knowledge can prove indispensable in elaborating new concepts. As the authors underscore, "Ambiguity can prove useful at times not only as a source of a new sense of direction, but also as a source of alternate meanings and a fresh way of thinking about things. In this respect, new knowledge is born out of chaos".

Another important contribution of this book is to highlight the importance of middle managers and the role they play in the knowledge-creation process. Middle managers serve as a bridge between the visionary ideals of the top and the often chaotic reality of everyday business. They synthesize the tacit knowledge of both front-line employees and senior executives, make it explicit, and incorporate it into new products and technologies. Their contribution points toward a model of management that is neither top-down nor bottom-up, but "middle-up-down". In this model, knowledge is engineered by middle managers, who are often leaders of a team or task force, through a spiral conversion process involving both the top and the front-line employees.

Coming from a rich research field that combines theoretical speculation and practical experience, this management book is unlike any other. In no other text you will find discussions on the philosophy of Descartes and Nishida juxtaposing figures depicting the mechanics of a disposable cartridge in a photocopier. The case studies are not just vignette illustrations reduced to their skeletal form, they are thick descriptions replete with technical specifications and biographical details of key participants. There are no laundry lists of implementable measures or mnemonics of keywords that conjure the image of an alphabet soup. Instead the theory is illustrated by rich diagrams and stories, emphasizing the role of pictures and metaphors in conveying knowledge in a non-verbal form. The Oxford University Press ought to be commended for bringing this volume, the first in a series, to the attention of a public that seldom gets management books worthy of a rereading.
