An excellent read for those who wish to learn to come across as more then just a man. This book while a VERY dry read, is actually full of dos and don'ts fir those who wish to learn.

but this copy is a major disappointment.

This review is not of the book, but this corrupted reprint. This printing, and the corresponding lady's version are NOT the same as the original, as content has been omitted. My boyfriend and I got these books to learn some more traditional teachings on Christian conduct, and the Christian parts were largely omitted including an entire chapter (Chapter X "Conduct in Church"). The 5 star rating is for the original, but this copy is a major disappointment.

I love practical books

I love practical books. And that is exactly a practical one. I'll try to make each of the projects. Only point, it uses Proteus. I've tried this software long ago when it was free, now it's quite expensive. So I will make each project for real, it's less expensive and you have more money to buy parts for your arduino/genuino projects. Even if this book is quite new it's not using the very last version of arduino ide.

Pretty please with sugar on top, bake recipes from the book before you review...

Of the 13 reviews so far, only one person has actually baked from the book and with questionable results. Another review did have some results but it is no longer is on line. I bought How To Cook Everything when it first came out in 1998 and used it so often when cooking that the binding is no longer attached. I've given or suggested HTCE for new cooks for years. I own other Bittman books that I don't use quite so much but reference them on occasion. This book was one I really wanted and I pre-ordered it. I'm really focused on improving my baking this winter.

I'm not sold on this book yet and wish reviews would be updated by people after they've actually baked from it. Yes it is full of information and there's lots of good sounding recipes, but information and good sounding don't necessarily equate with good results. Baking is much more science than art so the information needs to be spot on. Unlike cooking where questionable results in many cases can be tweaked to be edible or even better than the recipe, this is not always the case with baking. So here's my take so far.

I made the banana bread and like the prior reviewer whose post is no longer viewable, it was dense. Since we both had the same result, I'll keep the current recipe which is loved by all. I made the Overnight Waffles for use in a Belgian waffle maker. The description reads light and chewy. They were definitely chewy. To contrast, I made the King Arthur waffles the next morning and this was undoubtedly the winner.

The first shot at the no knead bread was a gloppy mess, which led to me overworking the dough and eventually throwing it out. Cut to the NYTimes video of Mark and Jim Leahy and voila, my bread came out perfectly using the NYT recipe, which is different than the book. Made the HTBE version again and it was same result as the first time which is runnier and goopier than the NYT version. I baked it and it was fine. Didn't look as nice as the NYT version and not as easy to work with, but texture and flavor were nice. Waited a couple of days and I made it again.
Im going to stick to the NYT version. The ratio of measured ingredients is not the same between the two recipes, which speaks to using weight as the reference in a recipe. Also, short of reading about working with sticky dough six pages earlier, a person not familiar with bread baking would be confused by the optional 2 tbsp of olive oil. There should at least be a mention next to the word optional about greasing the bowl with it.

The recipe for the sourdough starter was a bomb. I now have the KA one finishing up in the kitchen and I will stick to it.

I'm ready to bake from The Four and Twenty Blackbirds Pie book and will do a comparison between their crust which is not made with a food processor and Mark's which is. I hope more reviewers actually review after trying some of the recipes and not just based on appearances. Certainly I've not made enough to give a full review on all recipes, but felt it important the book not come off as the solution to every homemakers desire to nail baking first time around without anyone commenting on results.

Destined to be dog-eared and stained.

This is a cook book for people like me, who can't help tweaking recipes. Mark Bittman, like in his other books, has recipes with multitude suggestions for personalizing the baked goodies.

This was the Bittman weekend at my house. Here are the recipes I've tried, with my thoughts on the final items.

Banana Bread. Easy recipe, no problems. I gave the bread 4.5/5. It was a bit too sweet for my taste (maybe the bananas were extra sugary?), but I am biased. I've used an awesome recipe for years that contains sour cream, and Bittman's recipe doesn't. His was a bit firmer than mine, but then again, that's a matter of preference.

Pumpkin pie. That's 2 recipes, the flaky crust (good -- though I might've gotten carried away and over processed it a bit, but it held up fine). The pie could have used more spices, but the texture and mouth-feel were excellent. Definitely beats store bought!

Popovers. I got six giant ones baked in a large size popover pan (recipe for 12 small). Excellent!

And then for the holy grail. Brownies. I've spent my life searching for the perfect one...This might be it. He uses cocoa, not chocolate, but I did add the bonus chocolate chunks, one of the optional tweaks he recommended. Soft, fudgy, chocolatey, gooey.... next attempt will be with Valrohna instead of Hershey's, and I'll know for sure if I the search is over!

I agree with the reviewers who commented on the lack of measurements in weights. I was miffed when a recipe read to use a "stick" of butter, and I had Plugra brand, that's 8 oz, while the usual stick in the US is 4oz, one of four in the package. I played safe and used 4oz of it, and the recipe worked. I suspect the lack of weight measurements may be a carry-over from his cooking books, but baking needs to be more exact, and the oversight is almost inexcusable. So, I'm with the other reviewers on that, and am knocking off a star.

However, I'm discovering that I prefer the format and style of this book more so than my previous go-to all-purpose baking tome, the King Arthur Flour Bakers Companion, which has been relegated to the Goodwill pile. It's easier for me to riff off a "master" recipe than to pore through ten similar recipes (e.g. Muffins with variations vs. pages of different muffins that are all essentially the same basic recipe). This may be preferable to those of us who are somewhat experienced bakers, might be harder for brand new ones. For this, though, I'm giving 3/4 of a star back.

Final verdict: 4.75 stars.

I have a few more recipes planned for this week. If there is a significant change to my rating, I will update the review.

One last disclaimer: I paid for this book, wasn't given any freebies, and I don't know Mr Bittman!

Awesome

I'm a professional baker and because I own a few of Mark Bittman''s cookbooks I thought I'd get this one a try as well. It arrived today and it's another winner by Bittman. It's very detailed and thorough. This is great for bakers of all levels. It breaks down ingredients, equipment and techniques wonderfully. It has a lot of basic recipes with different variations. This book is a great learning tool, however you don't get pictures of food in this book other than illustrations when showing you how to do a action. I'm purchasing two more, one for each of my daughters to have.

The authors point out that there are two types of knowledge: explicit knowledge, contained in manuals and procedures, and tacit knowledge, learned only by experience, and communicated only indirectly, through metaphor and analogy. Great tool for the OD professionals' toolkit!

Excellent resource for professionals wanting to understand key principles to enabling a culture which promotes the creation and dissemination of knowledge throughout a company. Authors Ikujiro Nonaka and Hirotaka Takeuchi highlight the secrets of successful Japanese companies such as Cannon, Honda and Sharp and their ability to transfer explicit knowledge to tacit knowledge and ultimately new technologies and profits. According to Nonaka and Takeuchi, the key is their approach to managing the knowledge creation process and implementation of the Middle-up-Down management system. This book is a must-read for students and OD professional seeking to influence organizational design and culture.

Well Written Book On The Role Of Tacit Knowledge And Explicit Textual Knowledge In Social Organisations

In investigating knowledge, to study the role of different kinds of knowledge in the modern corporation - or perhaps, say, government department - one is not interested so much in its ontological status or even its truth or falsity but on its social role how it is learnt and taught and how it changes form as the organisation develops over time ...

Much more solidly based in real companies and real psychology than, say, excessively Hegelian approaches such as the 'social construction of reality' one or even 'ratomorphic behaviourists' who are surprised when they're bitten by theory rejection: the rats bite back, because their conscious minds reject being interpreted in terms of how lab rats behave!

Solid examples from dozens of case study investigations into Japanese companies!

And, whilst not as sound as an ontological approach, quite appropriate for the modern corporation, if not for the astrophysics research institute!

The Founding Text of the Knowledge-Creation School

This book has its origins in an article the two authors wrote for the Harvard Business Review in 1986 about new product development in Japanese companies. Rather than construct a complex theory, complete with flow charts and diagrams, they used a simple metaphor: developing a new product is more like a rugby game than a relay race. Under the relay approach, new-product development proceeds sequentially from phase to phase--concept development, feasibility testing, product design, development process, pilot production, and final production--with one group of functional specialists passing the baton to the next group. Under the rugby approach, the product development process emerges from the constant interaction of a multidisciplinary team whose members work together from start to finish. As in rugby, the ball gets passed within the team as it moves as a unit toward the goal.

Because project teams consist of members with varying functional specializations, the issue of learning was considered a key aspect of product development. The article focused on two dimensions of learning: across multiple levels (individual, group, and corporate) and across multiple functions. But although the authors devoted sections to cross-fertilization and transfer of learning, they didn't develop the epistemological dimension of learning, and their focus was more on the learning organization than on the knowledge-creating company. Japanese firms' reliance on trial and error and on learning by doing wasn't analyzed in terms of the prevalence of tacit knowledge and processes of organizational knowledge creation.

In their book, Nonaka and Takeuchi introduce a key distinction between two kinds of knowledge: explicit knowledge and tacit knowledge. Explicit knowledge can be expressed in words and numbers and shared in the form of data, scientific formulae, specifications, manuals, and the like. This kind of knowledge can be readily transmitted across individuals formally and systematically. Tacit knowledge, on the other hand, is highly personal and hard to formalize, making it difficult to communicate or share with others. Subjective insights, intuitions, and hunches fall into this category of knowledge. Difficult to verbalize, such tacit knowledge is deeply rooted in an individual's action and experience, as well as in the ideals, values, or emotions he or she embraces.

There are two dimensions to knowledge creation: epistemological and ontological. The epistemological level describes how knowledge is converted from one type into another through processes of socialization (from tacit knowledge to tacit knowledge), externalization (from tacit knowledge to explicit knowledge), combination (from explicit to explicit) and internalization (from explicit to tacit). The ontological level refers to the knowledge-creating entity: it includes individual, group, organizational, and interorganizational levels. A knowledge spiral emerges when the interaction between tacit and explicit knowledge is elevated dynamically from a lower ontological level to higher levels.

The authors believe that Japanese companies are especially good at realizing this exchange between tacit and explicit knowledge during the product development phase, and that there is a distinctively Japanese approach to knowledge creation. Epistemologically, Westerners tend to emphasize explicit knowledge and the Japanese tend to stress tacit knowledge. Ontologically, Westerners are more focused on individuals, while the Japanese are more group-oriented. These differences give rise to a wholly different view of the organization: not as a machine for processing information, but as a living organism. People in Japan emphasize the importance of learning from direct experience as well as through trial and error. Like a child learning to eat, walk, and talk, they learn with their minds and bodies. This tradition of emphasizing the oneness of body and mind has been a unique feature of Japanese thinking since the establishment of Zen Buddhism.

The Western philosophical tradition, culminating with Wittgenstein, stresses that "we cannot say what we cannot think". But through metaphors, analogies, and pictures, people put together what they know in new ways and begin to express what they know but cannot yet say. As Polanyi put it, "We can know more than we can tell". The concept of tacit knowledge focuses on highly subjective insights, intuitions, and hunches that are gained through practical experience. This messy knowledge can prove indispensable in elaborating new concepts. As the authors underscore, "Ambiguity can prove useful at times not only as a source of a new sense of direction, but also as a source of alternate meanings and a fresh way of thinking about things. In this respect, new knowledge is born out of chaos".

Another important contribution of this book is to highlight the importance of middle managers and the role they play in the knowledge-creation process. Middle managers serve as a bridge between the visionary ideals of the top and the often chaotic reality of everyday business. They synthesize the tacit knowledge of both front-line employees and senior executives, make it explicit, and incorporate it into new products and technologies. Their contribution points toward a model of management that is neither top-down nor bottom-up, but "middle-up-down". A gem from my girlhood!

This is the book that inspired me to be a nurse - I read my original copy (I won't say how many years ago!) until it fell apart. I just re-read it and it took me right back. It reminded me of when it was common to be kind, caring, and loving. It was a good reminder that maybe we all should take time to care about others and maybe want something NOT for how much money or fame it will bring, but for how much it will help others.

The next books from those days that I want to find are the biographies of Florence Nightingale and Dr. Tom Dooley.

That bridge failed because engineers made it by enlarging a previously successful idea. Wise designers, Petroski insists, must always contemplate the possibility of failure. Fail First..Fail Often

"This is the paradox of design: Things that succeed teach us little beyond the fact that they have been successful; things that fail provide incontrovertible evidence that the limits of design have been exceeded. Emulating success risks failure; studying failure increases our chances of success," page 114.

I bought this book because of the title and because I am always trying to find something good in something that is going bad. Eternal optimist. Some people get accused of being "the glass is half full" people. They drive others crazy by always smiling and looking on the bright side of things.

On the scale of possibility, I think I am a "glass isn't there" type person. I try to see things that aren't there yet, help others see those things, find hope in hopeless situations, and stay calm when the wheels are falling off because I have come to understand and realize that failure is a necessary ingredient to success, and I am starting to be less afraid of it. Now, a day rarely goes by that I don't feel like quitting--and I think that might be a good thing. If the work isn't hard, maybe it is not the right work.

During one of the darkest times of World War II, when someone remarked to Churchill that the state of the country was serious but not hopeless, he responded that the situation was hopeless but not serious. I think Churchill could see things that other people couldn't as well.

Success Through Failure is not an educational book. Educators have a tendency to try and avoid failure at all costs. It is almost like we are constantly trying to defend the status quo, or even worse, "create the past." How many times have you heard ideas preceded with this statement, "Back when I was in school..."

This is a book about people who build bridges, buildings, and improve technology. Occupations that require improvement for survival. I think educators can learn a lot from how we address and deal with failure. When these organizations experience failure, they try to figure out what they can do different to eliminate and reduce that failure and then they DO SOMETHING DIFFERENT.

In education, student failure is often viewed as the student's fault or the parent's fault. Historically, there has not been a lot of discussion about what the system (as individuals, groups, schools, or districts) could do different to reduce the failure, but that is starting to change.

There is some evidence that when educators face failure, they are starting by asking why and looking into the mirror. That is the best place to start. The book's best definition of failure can be found on page 51, "Failure is an unacceptable difference between expected and observed performance."

Incredible Resource

I'm using this book for my Intro to Structural Engineering class as an extra resource and it's really great. The story-like format and engaging anecdotes make for a pleasant read. It's also very well structured.
I'd recommend this if you also just want an abridged history of engineering design, even though you might not be one.

A must read for every young engineer

Most engineers, at least at the master's level, now are exposed to Petroski's books, but if you know any young engineers who have not read them they make a marvelous graduation gift. They relate notable failures in engineering to the history and culture of their time and to the improvements that resulted from them. Some, like the Tacoma Narrows bridge, have made it to television, but the superficial and sensational treatments they receive in television programming don't compare to Petroski's thoughtful and thorough analyses.
